Crunchy Tuna Salad

Do you feel like you eat the same thing for lunch everyday?  Need something different to mix it up?  This tuna salad might just do the trick and is super easy to make.  Put it on fresh greens, roll it up in a lettuce leaf or just eat it by itself with some fresh veggies and olives on the side.  If you prefer other crunchy veggies such as celery, peppers or radishes, feel free to switch it up.  When buying tuna, look for sustainably caught and packed in olive oil or water.  

 

Ingredients  

  • 2 cans (5 oz) albacore tuna (I use Wild Planet)
  • 1/3 cup primal approved mayo
  • 2 tablespoons spicy brown mustard
  • ¼-½ cup diced carrots
  • ¼-½ cup diced seedless cucumbers (or seeds removed)
  • 2 teaspoons capers (optional)
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder

 

Directions

  1. Add tuna to a medium size mixing bowl and flake apart with a fork.
  2. Add remaining ingredients and mix well to combine.
  3. Best served chilled.
